Teriyaki Swordfish Salad

Hi Healthy Living Junkies!  Want a tasty way to eat your greens and get healthy omega 3’s?  Try my new healthy teriyaki sword fish recipe.  A 3-ounce serving of grilled swordfish provides 108 milligrams of EPA, and 656 milligrams of DHA.  EPA and DHA are omega-3 fats that are found in fatty fish and shellfish.   It is also a great source of Vitamin D.  With a firm meaty texture, swordfish is a delicious way to change up your healthy protein.

Healthy Teriyaki Swordfish Salad

2 fillets of sword fish 5-7 oz
1 roma tomato, diced
1 clove of garlic, minced
1/4 cup of onions
1/4 cup soy sauce
1/4 cup raw sugar
1 teaspoon grated fresh ginger
2 tablespoon balsamic vinegar
1 wedge of lemon (optional)
1-2 tablespoon olive oil
1 bag of mixed greens salad

Dressing

3 cloves garlic
minced2 tablespoons minced fresh ginger root
3/4 cup olive oil
1/3 cup rice vinegar
1/2 cup soy sauce
3 tablespoons honey
1/4 cup water

Directions for Swordfish
Take the soy sauce, sugar, garlic, vinegar and ginger and mix to create marinade.  Add uncooked sword fish and marinade in fridge for 1-2 hours.  Heat olive oil in a pan on medium high.  Add onions and sautee until lightly brown around the edges,  about 2-4 minutes.  Remove swordfish from marinade and put in pan.  Discard marinade. Pan grill fish for 3-5 minutes on each side, or until cooked all the way through.  Arrange salad in 2 bowls and add in tomatoes and swordfish and onions.

Direction for Dressing
In a 1 pint glass jar or larger, combine the garlic, ginger, olive oil, rice vinegar, soy sauce, honey, and water. Cover the jar with a tight fitting lid, and shake well. Remove lid, and heat jar in the microwave for 1 minute just to dissolve the honey. Let cool, and shake well before serving. Store covered in the refrigerator.

Add dressing and enjoy

Healthy Blueberry Smoothie

Hi Healthy Living Junkies!   This is Annie and Andrea and we have a delicious healthy blueberry smoothie recipe for you.  It’s our favorite blueberry smoothie recipe because not only does it taste amazing, it is incredibly good for you too! Blueberries are high in antioxidants, which is has all kinds of health benefits including cancer fighting properties, is heart healthy, and well as improves your complexion.  Beauty in a cup?  Sign us up!  Flax seed is a healthy fat and aids in digestions, and the protein powder feeds your muscles.  Bananas are a healthy carb and is also high in fiber and nutrients.  Coconut milk is a great substitute for cow’s milk, is easier to digest and is also lactose free and has a rich creamy taste.

 

 

Healthy Blueberry Smoothie

Ingredients – 2 servings – Just half the recipe for one  =)

1 cup of blueberries (frozen or fresh, we used frozen)
1 banana
1 cup of coconut milk
1 scoop of protein powder (vanilla or unflavored)
2 teaspoons of flax seed (grounded)
Stevia (to taste)

 

 

Take all the ingredients and put it into a blender.  Blend for 10-15 seconds.  Pour in a cup and enjoy!  =) Try out our Blueberry smoothie and tell us what you think!  Better yet, show us your pictures!

Healthy Chinese Shrimp and Broccoli

Hi Healthy Living Junkies! We all love Chinese food, but it is usually greasy and full of oil.  I’ve got a great healthy Chinese Shrimp and Broccoli recipe with all the flavor, but none of the oil and fats.  Here is a quick and easy shrimp recipe that is tasty and ready within 10 minutes.  Why order take out when you can make it at home?  Besides, it is healthier too!

Easy Chinese Shrimp and Broccoli with XO Sauce

Ready in 15 minutes – Serves 4

1 lb of shrimp

4 cups broccoli

3 Tbsp of XO Sauce

1Tbsp of soy sauce

1 tsp sesame oil

 

Combine the XO Sauce and soy sauce and add shrimp.

Healthy Chinese Broccoli and Shrimp

Let it marinate for 10 minutes.

Meanwhile, lightly steam the broccoli for 3-5 minutes and set aside.  In a pan, add 1 teaspoon sesame oil and put the pan on high.  Add shrimp and saute for 3-5 minutes, until it is light orange.

Add steamed broccoli and steamed brown rice and enjoy!  =)

Healthy Chocolate Granola Bars

Hi Healthy Living Junkies!  With the holiday around, there will be temptation to snack on unhealthy foods.  Instead of reaching for an unhealthy snack, make your own tasty treats!  Here is one of my favorite recipes, which satisfies my sweet tooth while making a filling and nutritious snack.  Plus, who doesn’t love dark chocolate espresso beans!

HEALTHY DARK CHOCOLATE ESPRESSO GRANOLA BARS

Ready in 40 minutes – Makes 8 servings

INGREDIENTS

1 cup rolled oats

1/2 cup whole grain flour

2 scoop vanilla protein powder

1 tbsp raw honey

2 oz dark chocolate covered espresso beans

1/3 cup coconut oil

1/4 cup unsweetened applesauce

1/4 tsp sea salt

1/4 tsp baking soda

1/4 tsp cinnamon

1/2 tsp vanilla extract

Preheat the oven to 325 degrees. Place all the ingredients in a large mixing bowl and mix with a wooden spoon to combine. Spread the mixture evenly in a 9″x9″ baking dish. Bake the mixture for 25 to 30 minutes, or until golden around the edges. Let it cool and slice into 8 bars. Serve immediately or refrigerate for later use.

Carbohydrates: 26g

It is easy to make, healthy, and perfect for those people who are looking for a delicious new recipe with all the taste and still be able to commit to their fitness goals.  If you are looking for a new way to eat collard greens, this recipe is for you. It’s healthy, yummy and guaranteed to please a hungry crowd.

Healthy Vegetarian Wraps

Serves: 4 (makes 8 wraps)

Start to Finish: 20 minutes

Ingredients:

4 large collard leaves

1 red bell pepper

1 avocado

2-3 ounces alfalfa sprouts

1/2 lime

1 cup raw pecans

1 tablespoon tamari (gluten-free soy sauce)

1 teaspoon cumin (or 1/2 teaspoon minced garlic and 1/2 teaspoon grated ginger)

1 teaspoon extra virgin olive oil

Directions:

1. To prepare collard leaves wash leaves, cut off white stem at the bottom that has no leaves and place them in a bath of warm water with juice of half a lemon. Let soak for 10 minutes. Dry the leaves off with paper towels and using a knife thinly slice down the central root (to make it easier to bend the leaves for wrapping). See detailed explanation with pictures here.

2. Slice avocado and pepper.

3. In a food processor combine pecans, tamari, cumin (or garlic ginger mix) and olive oil. Pulse until combined and mixture clumps together.

4. Place a collard leaf in front of you and layer nut mix, red pepper slices, avocado slices, a drizzle of lime juice and alfalfa sprouts. Fold over the top and bottom and then wrap up the sides. Slice in half and serve.
